So right now I'm flying a dual joystick setup, and it works pretty well in except for throttle control. Throttle is currently bound to a slider which I basically leave at 100%. What I tend to do it get close to a target, and then use match speed to slow down and fire. Quickly toggling on and off decouple sends my throttle back to 100% and lets me close gaps quickly, and then I match speed again. I've also got throttle up/down bound to the twist on my left stick, but I tend not to use that very much.

That said, I think I'd be better off with a dedicated "gas" pedal like in a car. While I'm at it, putting a brake down there would probably be pretty intuitive as well. In looking into the things I could buy, I've yet to find a gas/brake combo that's on the inexpensive side, which is making me think of building my own. I've dug into it a bit, and I think using a Teensy (https://www.pjrc.com/store/teensy31.html) and Teensyduino Joystick (https://www.pjrc.com/teensy/td_joystick.html) would be pretty doable. On the hardware side the throttle would have to be either a Hall Effect Sensor, or some sort of linear potentiometer.

I think I can figure this out, but I was wondering if anyone has any experience with a similar build, and maybe some links to tutorials? I'd love to hear people's suggestions / advice, or even options for cheap pedals to buy if I've missed something in my googling.
